This is a simple Peanut Butter Valentine’s Day Cookie that makes everyone in your family happy!

Valentine’s day is right around the corner and has always been a special day for us. (If you are curious why, I wrote about it here.) It’s fun to make a treat for us, and for me the fun is making the treats!
Sometimes you don’t want to invest a lot of time but want something pretty to present. This peanut butter Valentine’s day cookie is it!
The best thing about these Peanut Butter Valentine’s Day Cookies are the simple and minimal ingredients.
Peanut butter, eggs, sugar, vanilla and that’s it! No flour so they are Gluten-Free too!
Can you believe only 4 ingredients? …technically.
Personally, I like to sprinkle coarse sea salt on top of our cookies so 5 ingredients, but if you don’t like that, then sprinkle sugar on top and it will look just as pretty.

Besides the usual, baking pan, measuring spoons and cups, you need a little parchment paper and either a heart-shaped cookie cutter or a cookie stamp. Peanut Butter Valentine’s Day Cookie Recipe
Finally, the recipe for these pretty peanut butter valentine’s day cookies!
Ingredients
- 1 Cup Peanut Butter
- 1 Cup Sugar
- 1 tsp Vanilla
- 1 Egg
- Coarse Salt or Sugar
Directions
- Preheat oven to 350 degrees.
- Mix first 4 ingredients well with wooden spoon.
- Form into 1″ balls and place on parchment lined cookie sheet.
- Either flatten cookie balls with your cookie stamp or if using cutter, then flatten with drinking glass and cut out removing excess dough, adding it back into the bowl. Continue doing this until all dough is gone. With using the cookie cutters, I like to press the back of the fork tines to give it a traditional peanut butter cookie look.
- Sprinkle with the coarse salt or sugar (your choice)
- Bake 5 minutes, turn cookie sheet and bake 5 additional minutes, until done.
- Place on drying rack to cool before eating.

Tips on using cookie stamp for Peanut Butter Valentine’s Cookies
I found by spraying my stamp with a little bit of oil helped to keep the stamp from sticking. Also, make sure that it is completely dry of water before using.
